Sheet Pan Honey Mustard Chicken & Vegetables

carrot
peeled and chopped

potato
cut into wedges

head broccoli
cut into florets

head cauliflower
cut into florets

olive oil

Instructions
Preheat oven to 400F.
Mix together the honey and the mustard in a small bowl.
Coat large baking sheet with 1 tbsp olive oil. Place the chicken breasts on baking sheet. Brush the honey-mustard mixture over the chicken breasts.
Arrange vegetables around the chicken.
Drizzle two tbsp olive oil over chicken and vegetables. Sprinkle salt and pepper over chicken and vegetables. Bake for 25-30 minutes.
Serve immediately.
Notes
Consider adding purple varieties of carrots, potatoes and cauliflower for a boost of anthocyanins.
