Sheet Pan Honey Mustard Chicken & Vegetables

Ingredients
- 2 tbsp honey
- 1 tbsp brown mustard
- 4 chicken breasts
- 1 carrot peeled and chopped
- 1 potato cut into wedges
- 1 head broccoli cut into florets
- 1 head cauliflower cut into florets
- 3 tbsp olive oil divided
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 400F.
- Mix together the honey and the mustard in a small bowl.
- Coat large baking sheet with 1 tbsp olive oil. Place the chicken breasts on baking sheet. Brush the honey-mustard mixture over the chicken breasts.
- Arrange vegetables around the chicken.
- Drizzle two tbsp olive oil over chicken and vegetables. Sprinkle salt and pepper over chicken and vegetables. Bake for 25-30 minutes.
- Serve immediately.
Notes
Consider adding purple varieties of carrots, potatoes and cauliflower for a boost of anthocyanins.
