Sheet Pan Honey Mustard Chicken & Vegetables

  • 2 tbsp honey
  • 1 tbsp brown mustard
  • 4 chicken breasts
  • 1 carrot peeled and chopped
  • 1 potato cut into wedges
  • 1 head broccoli cut into florets
  • 1 head cauliflower cut into florets
  • 3 tbsp olive oil divided
  • 1/2 tsp salt
  • 1/2 tsp pepper


  • Preheat oven to 400F.
  • Mix together the honey and the mustard in a small bowl.
  • Coat large baking sheet with 1 tbsp olive oil. Place the chicken breasts on baking sheet. Brush the honey-mustard mixture over the chicken breasts.
  • Arrange vegetables around the chicken.
  • Drizzle two tbsp olive oil over chicken and vegetables. Sprinkle salt and pepper over chicken and vegetables. Bake for 25-30 minutes.
  • Serve immediately.


Consider adding purple varieties of carrots, potatoes and cauliflower for a boost of anthocyanins.
