In a large bowl, mix together honey, vegetable oil, vinegar, salt and pepper.
Add prepared vegetables to honey and vinegar mixture in bowl and toss to fully coat.
Cover bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow flavors to combine. Serve cold as a side dish with a lean protein, or as a meal topping.
Notes
Tip from the Kitchen Always wash fresh produce under running water prior to preparing to ensure food safety. Produce with a firmer surface such as peppers and carrots can also be scrubbed with a brush.
