Colorful Coleslaw


  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • ¼ cup onion thinly sliced
  • ½ cup bell pepper finely chopped
  • 1 carrot grated
  • 2 tbsp honey
  • tbsp vegetable oil
  • tbsp vinegar
  • pinch of salt
  • ½ tsp pepper


  • In a large bowl, mix together honey, vegetable oil, vinegar, salt and pepper.
  • Add prepared vegetables to honey and vinegar mixture in bowl and toss to fully coat.
  • Cover bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow flavors to combine. Serve cold as a side dish with a lean protein, or as a meal topping.


Tip from the Kitchen
Always wash fresh produce under running water prior to preparing to ensure food safety. Produce with a firmer surface such as peppers and carrots can also be scrubbed with a brush.
