Place quinoa in medium saucepan along with 1¾ cup water. Bring to boil, then cover and reduce heat to simmer for 15 minutes or until cooked.
Remove lid and cook until all water is evaporated. Remove from heat.
Make dressing by combining vinegar, mustard, oil, and salt/pepper in a bowl or jar.
Place quinoa, spinach, arugula, strawberries, almonds, and basil in a bowl and combine.
Pour dressing over salad and toss just prior to serving.
