Strawberry Quinoa Salad

Ingredients
Dressing
- 2 tbsp vinegar
- 1 tsp Dijon mustard
- 2 tbsp olive oil
- salt and pepper to taste
Salad
- ½ cup dry quinoa
- 2 cups baby spinach leaves
- 2 cups arugula
- ⅔ cup sliced strawberries
- 2 tbsp sliced, toasted almonds
- 1 handful fresh basil leaves chopped
Instructions
- Place quinoa in medium saucepan along with 1¾ cup water. Bring to boil, then cover and reduce heat to simmer for 15 minutes or until cooked.
- Remove lid and cook until all water is evaporated. Remove from heat.
- Make dressing by combining vinegar, mustard, oil, and salt/pepper in a bowl or jar.
- Place quinoa, spinach, arugula, strawberries, almonds, and basil in a bowl and combine.
- Pour dressing over salad and toss just prior to serving.
