Strawberry Quinoa Salad

Ingredients

Dressing

  • 2 tbsp vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • salt and pepper to taste

Salad

  • ½ cup dry quinoa
  • 2 cups baby spinach leaves
  • 2 cups arugula
  • cup sliced strawberries
  • 2 tbsp sliced, toasted almonds
  • 1 handful fresh basil leaves chopped

Instructions

  • Place quinoa in medium saucepan along with 1¾ cup water. Bring to boil, then cover and reduce heat to simmer for 15 minutes or until cooked.
  • Remove lid and cook until all water is evaporated. Remove from heat.
  • Make dressing by combining vinegar, mustard, oil, and salt/pepper in a bowl or jar.
  • Place quinoa, spinach, arugula, strawberries, almonds, and basil in a bowl and combine.
  • Pour dressing over salad and toss just prior to serving.
