Nutty Sweet Potato Casserole


Sweet potato filling

  • 2 large Sweet potatoes
  • ½ cup unsweetened applesauce
  • ¼ cup milk
  • tsp ground cinnamon
  • tsp nutmeg

Nutty topping

  • ¼ cup quick oats
  • ¼ cup chopped pecans
  • 1 tbsp ground cinnamon
  • tbsp butter


  • Preheat oven to 350°
  • Wash sweet potatoes and pierce with fork. Microwave for 15 minutes or until soft throughout.
  • Remove skin and mash cooked sweet potato with a fork.
  • Add applesauce, milk, vanilla extract, cinnamon and nutmeg and stir to incorporate with sweet potato. Spread mixture in an 8" baking dish.
  • Mix topping ingredients together and sprinkle over sweet potato mixture.
  • Bake for 20 minutes.
