Nutty Sweet Potato Casserole
Ingredients
Sweet potato filling
- 2 large Sweet potatoes
- ½ cup unsweetened applesauce
- ¼ cup milk
- 1½ tsp ground cinnamon
- ⅛ tsp nutmeg
Nutty topping
- ¼ cup quick oats
- ¼ cup chopped pecans
- 1 tbsp ground cinnamon
- ⅔ tbsp butter
Instructions
- Preheat oven to 350°
- Wash sweet potatoes and pierce with fork. Microwave for 15 minutes or until soft throughout.
- Remove skin and mash cooked sweet potato with a fork.
- Add applesauce, milk, vanilla extract, cinnamon and nutmeg and stir to incorporate with sweet potato. Spread mixture in an 8" baking dish.
- Mix topping ingredients together and sprinkle over sweet potato mixture.
- Bake for 20 minutes.
Notes
Take a stand against candied yams, but don’t pass on the sweet potatoes. By nature’s design, sweet potatoes are sweet! They don’t require syrup or even a marshmallow topping. This sweet potato casserole recipe swaps applesauce for the oil and adds a healthy topping of nuts, rich in omega-3s.
