2large Granny Smith or Honeycrisp applescored and cut into matchsticks
1shallotthinly sliced
1/4cupapple cider vinegar
1tbspdijon mustard
2tbspolive oil
2tbspfresh parsley or cilantrochopped
Salt and pepperto taste
Instructions
Whisk together the cider vinegar, dijon mustard and olive oil.
Season with salt and pepper, then add the sliced shallots.
Mix to combine then let sit for 5 minutes for flavors to marry.
Stir in kohlrabi and apple matchsticks.
Serve fresh or refrigerate to serve chilled.
Notes
Kohlrabi is one of the more unusual members of the cabbage family, it can be eaten raw or roasted. Kohlrabi is an excellent source of fiber, vitamin C, potassium and B6.
