Colorful Coleslaw
Ingredients
- 2 cups green cabbage shredded
- 1 cup red cabbage shredded
- ¼ cup onion thinly sliced
- ½ cup bell pepper finely chopped
- 1 carrot grated
- 2 tbsp honey
- 1½ tbsp vegetable oil
- 1½ tbsp vinegar
- pinch of salt
- ½ tsp pepper
Instructions
- In a large bowl, mix together honey, vegetable oil, vinegar, salt and pepper.
- Add prepared vegetables to honey and vinegar mixture in bowl and toss to fully coat.
- Cover bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow flavors to combine. Serve cold as a side dish with a lean protein, or as a meal topping.

Tip from the Kitchen
Always wash fresh produce under running water prior to preparing to ensure food safety. Produce with a firmer surface such as peppers and carrots can also be scrubbed with a brush.
