Watermelon Blueberry Salsa

  • 2 tomatoes
  • 1/2 onion
  • 1 jalapeno seeded
  • 1 cup watermelon diced
  • 1 cup blueberries
  • 3 tbsp cilantro chopped
  • 2 tbsp mint chopped
  • 3 tbsp lime juice
  • 1/4 tsp sea salt


  • Mix together tomato, onion and jalapeno using a food processor until consistency is finely chopped.
  • Stir in watermelon, blueberries, cilantro, mint, lime juice and salt.
  • Cover and refrigerate for at least 30 minutes to let the flavors develop.


Carotenoids (like lycopene and beta carotene in watermelon) and polyphenols (like the anthocyanins malvidin and delphinidin in blueberries) actually work together to improve antioxidant activity in a synergistic way. This delicious take on a salsa is a refreshing addition to summer meals. Eat it alone or with your favorite summer dish! May we suggest it’s a nice compliment to fish, rice or chips.
